Delicious Meal of Tonight


Hello Lovelies,

  Tonight I decided to cook a super healthy dinner for my family and I. My husband and I have been working on our eating and exercise habits, so I have been looking up fabulous Pinterest recipes to try out.

  Behold, One Pot Lemon Herb Chicken and Rice with Garlic Parmesan Roasted Broccoli!

  This was my second time this week making these recipes because they are simple and easy to cook. Plus my Husband loved it! So here are the recipes for you all, it took me 40 minutes to make the entire meal! Of course you can double and triple the recipes if you need more. I would say that the maximum servings you would get out of the provided recipes would feed three-four.

One Pot Lemon Herb Chicken & Rice

Ingredients for the Chicken:

* 4 Boneless Chicken Breasts (I like to chop up the chicken).
* 2 Tablespoons of Butter
* Salt and Pepper to Taste
* Italian Seasoning

Ingredients for Rice:

* 1.5 Cups of Uncooked Rice (I prefer to use brown rice).
* 2 Cups of Chicken Broth
* Juice of One Lemon


1.) Melt Butter over medium heat in a large skillet/wok (with a lid). Season chicken with salt, pepper, and Italian seasoning. Brown chicken in the butter for 1-2 minutes on each side. (Chicken shouldn't be fully cooked through at this point) transfer chicken to a plate.

2.) Add rice, chicken broth, lemon juice, and remaining Italian seasoning to the pan (no need to clean it first). Place chicken on top, then cover and simmer over medium-low heat for 20-25 minutes until liquid dissolved.

3.) Garnish with fresh parsley or cilantro if desired and lemon wedges for squeezing. Serve Immediately.

Garlic Parmesan Roasted Broccoli


* 5 Cups of Broccoli Florets
* 3 Tablespoons of Olive Oil
* 4 Cloves of Garlic (Minced).
* Salt and Pepper
* 1/4 Sup of Grated Parmesan
* Italian Seasoning
* Juice of One Lemon


1.) Preheat oven to 425 degrees F. Lightly oil baking sheet.

2.) Place broccoli florets in a single layer onto the prepared baking sheet. Add olive oil and garlic; season with salt, pepper, and Italian seasoning, gently toss to combine.

3.) Place in oven and bake for 8-10 minutes, or until tender.

4.) Serve immediately sprinkled with Parmesan and lemon juice.
